A classic for the gluten-intolerant or bread avoident
Decided to change up the usual ostrich burger and replaced the bun with two giant mushrooms. In between the layers of mushroom, lettuce and an ostrich patty, we placed balsamic onions with basil pesto and some feta.
Was really yum but SO messy! I ended up eating mine with a knife and fork. If you're keen to make your own - make sure you are ready for all ingredients to go all over the table/plate.

On this specific day, I thoroughly enjoyed their beetroot, carrot, celery and ginger fresh juice with a majool date, cocoa, coconut and walnut little delight.
Ginger-loving Thai Inspiration
What started off as a quick and simple dinner turned into one of the greatest culinary discoveries made thus far!

Ingredients
- 1 tbsp coconut oil
- Salt & pepper to taste
- 4 chicken breasts
- 1 onion finely sliced
- 2 cloves of garlic, squashed and sliced
- 1 tsp of grated fresh ginger (put more if you'd like, I did!)
- 1 tbsp of sesame seeds
- 1 fresh green chilli (omit seeds if you don't like it too spicy)
- 1/4 cup of coconut flakes
Directions
- Preheat oven to 230 degrees C.
- In an oven-safe pan or cast iron skillet melt the oil and place the seasoned chicken breasts into the pan. Brown on both sides on medium high heat.
- Once browned, add in the onions and chilli and sauté.
- After about 4 minutes, add all the remaining ingredients and cook together for 1 minute.
- Pop everything (including the pan/skillet) into the oven and cook for 30 minutes.
- You'll know your chicken is ready when you can easily push a knife through it.
We had ours with grilled zucchini, carrots, garlic and green peppers. Remember that veg that contain lots of water 'shrink' once cooked!
No one can say that cooking healthy takes a lot of time or effort!
The meal took not even 10 minutes to put together. Most of the time spent was chopping the ingredients - of which we did double - and I have found how handy it is to have a Kitchen Aid (no, not the mechanical one) to assist with chopping and slicing (he's also an enthusiastic taster too). The ingredients were simple yet together they created an incredible flavour! What a win of a meal!
